Gary’s Restaurant has 2 priority breaches and a maximum of 13 infringements.

The Violations Found As in 7th  April Report are as Follows:

Both dairy dressings /condiments ~46-47 Fahrenheit, floor to ceiling, at end of cook-line in a single-door access cooler. In order to avoid bacterial contamination, potentially harmful food (phf) should be maintained at or below 41 f. Today, the thermostat has been changed and air temperatures decreased to a colder setting. To ensure the phf stays at or below 41 f and stop this cooler if the appropriate temperatures are not maintained, it is controlled periodically by this cooler.

Note: To record the food temperature (2-4 times a day), use the cooler log given today to establish if the refrigerator is working correctly.

In kitchen area, excessive grime/dirt was found on a wall/vent, excess food waste/grime was found in the back, behind/under ice makers, under floor bodies under the two-door (glass) coolers, underfloor cabinets in walk-in cooler (wic), on beer lines and on walls with in beer wic, excess ice accumulation on the wall, and under the wire/grime was found. As much as possible to avoid contaminations and build-up on  walls, floors, and ceilings should be cleaned. Clean the above areas more often. Maintain the clean state of the physical facility.

Four priority breaches and a total of ten infringements occurred in Every Woman’s Place Inc. (863)

inc. (1221 w. Laketon ave., Muskegon).

A Few of The Breaches Found In The April 21 Report are:

On the surface under the kitchen sink, a lot of dead insects like ants were found. If found to reduce other attractions of pests, remove and clean off dead insects. To clear all  live/ dead insects, mop the floor underneath the sink and track if the pest activity continues.

Several opened dog bags (date 4/3), pulled pork container (date 4/2) as well as mac-n-cheese containers (date 4/10) were discovered obsolete for 11-19 day storage, in a dining area in domestic refrigeration. Potentially dangerous food ready-to-eat (rte/phf) should be used or disposed for reducing bacterial contamination within 7 days (without frozen). Today, all the obsolete products have been discarded. To verify the use, frozen or discharged in 7 days, check rte/phf daily.

Kat’s Alley (in Ravenna Bowl)

There were four priorities infringements and a maximum of five infringements in Kat’s Alley, Ravenna (2,9915 S. Slocum Road).

These were Some Infringements of the April 13 Report:

Raw chicken has been packed on baked potatoes, on the walk in refrigerator. In order to avoid cross-contaminating, all raw meat products should be processed separately and ready for eating.

A retail package of cut lettuce had no date label in the refrigerator cooler. Mark all dates which should not be more than 7  days for ready to consume foods. The date of the pic was 4-10.

Lakeside Veterans Club

The Lakeside Veterans Club on the side of the lake (1777 Lakeshore road, Muskegon) has 5 priority breaches and total seven breaches.

Some Infringements In the April 20 Report:

On the cooler, there were no date marks as appropriate in 2 pieces of bacon tie pastas there were no dates. Mark a date not to exceed seven days to make sure of food safety, for ready for consumption food.

Two surface cleaning bottles and two paint cans were saved during the assessment in the dry liquor storage room during today’s review, over pre packed fries as well as various snack items. To avoid possible chemical exposure, store every chemical product separately and below the  food and use of single products. Reorganize chemicals to store food products and individual items separately.

Muskegon Community College

Muskegon Community College (221 s. Trimester Lane, Muskegon) had a total of five priority violations overall.

Some Infringements Of The April 4 Report:

Raw and  shelled eggs being stored on savory cream in the cooler,  in the cook line and ready to eat salad and other foods. To avoid cross-contamination, store raw animal items separately below the ready for food consumption. Both the eggs were correctly relocated on the walk-in and  cook line and prep cooler.

In a cooler  a sliced ham jar had 4-2 drop-date and had Nine calendar days in the  deep freeze. After seven calendar days all potentially harmful foodstuffs are to be discarded to guarantee food safety.

Papa John’s Pizza #786

Papa John’s Pizza reported two priority breaches (1771 E. Apple AV., Muskegon), of  totally eight violations.

Some infringements in the April 10 report:  In the prep-cooler of pizza, several containers were identified with expired dates (dates noted are consumption datings): salami- 4/1, chicken poppers –  4/8, (spinach dip dated 14 days – phmc was told that it should  be marked 7 days), beef (4/5, 2 4/8 containers), and other potentially harmful foods (rte/phf). To avoid misuse and pollution, the obsolete rte/phf should be withdrawn from usage. Today, all the above things have been withdrawn from use. To ensure the deletion of obsolete products in order to avoid usage and possible contamination, search periodically rte/phf.

On some of the pizza grates, a rack of clean grates underneath the pizza dough prep table was found to have an abnormal amount of grime. As much as possible to avoid accumulation and contamination, frying pans should be cleaned  Clean or clear from the center all the stained pizza grills. After every day of use, clean those grate pans.
